ABC Bliss Balls

The combination of almonds, brazil and cashew nuts in ABC spread, provides a great source of healthy fats and proteins which are beneficial to improving things like our energy and immunity levels. These healthy bliss balls can be stored in the fridge for up to two weeks but are so delicious we doubt they’ll last that long!

Ingredients
60g dried cranberries
45g dried blueberries
50g dried apricots
½ cup roasted cashes
½ cup roasted almonds
1/3 cup sunflower seeds
1/3 cup ABC spread
1/3 cup desiccated coconut, plus extra to coat

Method

  1. Place the cranberries and blueberries in a heatproof bowl and cover with boiling water. Set aside for 10 minutes to soften, then drain well keeping a small amount of water aside for later.
  2. Process the cashews, almonds and sunflower seeds in a food processor until finely chopped. Add nut butter, soaked fruit and coconut and process again until finely chopped.
  3. Add 1 tablespoon of the reserved water and process until the mixture comes together. Add the apricot and process until just combined.
  4. Roll tablespoonfuls of mixture into balls and coat in the extra coconut. Store in an airtight container, layered with baking paper.

Tip: When shopping for nut butters, look for one where the oil seems to pool on the top during storage – this is a sign of a good quality nut butter. Don’t tip this away, give your butter a quick stir before using to create a great consistency!
