ABC Bliss Balls

The combination of almonds, Brazil nuts and cashews in ABC spread provides a great source of healthy fats and protein, which can support energy levels and immunity. These bliss balls can be stored in the fridge for up to two weeks, although they’re so delicious they may not last that long.

Ingredients

  • 60g dried cranberries
  • 45g dried blueberries
  • 50g dried apricots
  • 1/2 cup roasted cashews
  • 1/2 cup roasted almonds
  • 1/3 cup sunflower seeds
  • 1/3 cup ABC spread
  • 1/3 cup desiccated coconut, plus extra to coat

Method

  1. Place the cranberries and blueberries in a heatproof bowl and cover with boiling water. Set aside for 10 minutes to soften, then drain well, keeping a small amount of water aside for later.
  2. Process the cashews, almonds and sunflower seeds in a food processor until finely chopped. Add the ABC spread, soaked fruit and coconut, and process again until combined.
  3. Add 1 tablespoon of the reserved water and process until the mixture comes together. Add the apricot and process until just combined.
  4. Roll tablespoonfuls of mixture into balls and coat in extra coconut. Store in an airtight container, layered with baking paper.

Tip

When shopping for nut butters, look for one where the oil naturally separates and pools on top. This is often a sign of a good quality product. Stir before using to create a smooth consistency.
