Dark chocolate almond bars recipe

Makes: 12 bars

Ingredients

  • 1 cup cacao butter
  • 1/3–1/2 cup maple syrup (to taste)
  • 1 cup cacao powder or unsweetened cocoa powder
  • 1 teaspoon vanilla extract
  • 1/2 cup roasted almonds (or other toppings)
  • 1/8 teaspoon sea salt

Method

  1. Melt cacao butter in a heatproof bowl over a saucepan of simmering water, or in the microwave until fully liquid.
  2. Remove from heat, add maple syrup and whisk until fully combined with no separation.
  3. Add cacao or cocoa powder and vanilla extract, whisking until smooth.
  4. Taste and adjust sweetness by adding more maple syrup if desired.
  5. Pour into moulds, cupcake liners or onto a lined tray. Top with almonds and a sprinkle of salt.
  6. Refrigerate or freeze for 30–60 minutes until set.
  7. Once solid, break or cut into bars. Store in an airtight container in the fridge for 2–3 weeks or freeze for longer storage.
