Finding healthy options for school and work can be difficult, especially when the kids are starting to get tired of the usual choices. While supermarkets offer plenty of ‘healthy’ snack options, many are still high in sugar and can be expensive.
This simple muesli bar recipe is both nut and gluten free, and a great base you can adapt to suit your family’s tastes. For example, substitute the sultanas and dried apricots with other dried fruits, add nuts, or replace half the honey with peanut butter and include some dark chocolate chips.
Homemade muesli bars recipe

Ingredients
- 125ml honey
- 125g butter
- 1 cup Rice Bubbles
- 1 cup sultanas
- 1/2 cup dried apricots
- 1/2 cup desiccated coconut
- 1/2 cup pepitas
- 1/4 cup sugar (optional)
Method
- Preheat oven to 180°C (160°C fan-forced). Grease and line a slice tray approximately 31cm x 22cm with baking paper.
- Combine the honey and butter in a saucepan over medium heat. Cook, stirring, for 2–3 minutes until melted. Bring to the boil and cook for 2 minutes or until the syrup thickens slightly, then remove from heat.
- Combine the remaining ingredients in a large bowl and pour over the hot syrup. Stir to combine.
- Spoon the mixture into the prepared tray and press firmly so it holds together.
- Bake for 15–20 minutes or until golden.
- Allow to cool, then refrigerate until firm before cutting into 24 slices (approximately 2cm x 6cm).
